Owner: Lisandro “Chando” Madrigal
Signature Dish: Chando's Mulita
#1 When did you start your business, and what inspired you to become a food truck operator?
I began catering for people in their back yards in 2007 and purchased my first food truck in late 2010 after opening my original restaurant at 863 Arden way in Sacramento.
I started catering as a hobby and because I was tired of eating food that was not to my standards. I wanted to bring different flavors and experiences to the people of Sacramento. The food truck was a different way for me to reach out to my customers and give them a different way to experience Chando’s. Brick and mortar, back yard catering via taco cart and now food truck!
#2 What is the most popular dish on your menu, and how is it created?
The most popular dish on our food truck is the Chando’s Mulita- Expertly made by layering jack cheese and your choice of meat between two corn tortillas. Topped off with Chandos's signature fresh cilantro, delicious diced onions, creamy guacamole and tangy salsa for an instant flavor explosion!
#3 What is your favorite part of being a food truck owner?
My favorite part of being a food truck owner is the fact that we can bring Chando’s to you, the customer! Another aspect is that the job is very dynamic, and we have met a bunch of awesome people along the ride.
You can find Chando’s Tacos at SactoMoFo events all over the greater Sacramento region!

Each SactoMoFo Owner Spotlight shares an interview with a food truck owner in our network, providing insight on how these smallest of small business owners have carved a unique mark upon the mobile food landscape in Northern California.
